COLD SOBA WITH TSUYU

INGREDIENTS

  • 2 bundles dried soba
  • 1 cup dashi (or water with a 2-inch piece of kombu, steeped 20 minutes)
  • 3 tbsp DOJO soy sauce
  • 2 tbsp mirin
  • Grated daikon, scallion, wasabi, nori strips

METHOD

  1. Warm the dashi, soy sauce, and mirin until just steaming. Chill.
  2. Boil the soba per the package, then rinse well under cold running water, rubbing the noodles to remove starch. Drain on a bamboo tray or plate.
  3. Pour the chilled tsuyu into small cups. Add scallion and wasabi.
  4. Dip a bite of noodles at a time. Top with nori.
