SOY-BUTTER MUSHROOMS

INGREDIENTS

  • 1 lb mixed mushrooms (shiitake, maitake, oyster, or cremini), torn
  • 2 tbsp butter
  • 1 tbsp neutral oil
  • 1 clove garlic, sliced
  • 1 1/2 tbsp DOJO soy sauce
  • Black pepper, chopped parsley or scallion

METHOD

  1. Heat the oil in a wide pan over high heat. Add the mushrooms in a single layer and leave them alone until browned, about 4 minutes, then toss.
  2. Add the butter and garlic and cook 1 minute.
  3. Pull the pan off the heat and squeeze in DOJO; toss so it sizzles and coats everything.
  4. Finish with pepper and herbs. Serve over rice, toast, steak, or eggs.
