Ajitama, the jammy ramen egg. Soy sauce does all the seasoning here, so a barrel-aged one gives you depth without the usual salt bomb.

Soy-Marinated Eggs

SOY-MARINATED EGGS

INGREDIENTS

  • 6 eggs
  • 1/2 cup DOJO soy sauce
  • 1/2 cup water
  • 3 tbsp mirin
  • 1 tbsp sugar
  • Optional: 1 clove garlic, smashed; a slice of ginger

METHOD

  1. Bring a pot of water to a boil. Lower in the eggs and cook 6 minutes 45 seconds for jammy yolks. Move to ice water, then peel.
  2. Warm the soy sauce, water, mirin, sugar, and aromatics until the sugar dissolves. Cool completely.
  3. Submerge the peeled eggs in the marinade in a zip bag or small container. Refrigerate 8 to 24 hours, turning once.
  4. Halve and serve on ramen, rice, or on their own with a little of the marinade.
